Here’s the magic behind my Cod Misozuke — a deliciously marinated dish that’s packed with umami! 🐟 It’s all about that perfect balance between miso and delicate cod, making each bite flavor-packed. marinade
1.5-2lbs of fish fillet
1/4 Cup white miso
1/4 cup mirin
1/4 cup sake
1 tbsp soy sauce
1 tsp dark soy sauce
3 tbsp brown sugar
*reserve 1/3 of the marinade, then reduce on medium-high for a sauce*
Seasoned rice
cook 2 cups of washed short grain rice per package instructions
1/4 cup of rice vinegar
4 tbsp sugar
quick dressing
4 tbsp rice vinegar or lemon juice
4 tbsp sugar or honey
2 tbsp roasted sesame seeds, crushed
1 garlic clove, grated (optional)
recipe notes:
– keep marinaded fillets in the fridge for at least 1 hr or overnight.
– grind or crush sesame seeds for max roast flavor
– sub cod for salmon, halibut, chicken or even tofu
– sub watercress for micro greens, arugula or any other leafy greens
– sub soy sauce for tamari
– sub sake for dry white wine
– broil fillets until nicely brown, 5-6 mins per 1 inch thick fillets or airfry at 400° for 6-8mins. (adjust cooking time and temp based on your choice of protein)
